Quick and Easy Pork Meatballs and Hidden Veg Sauce

If your littles are a fussy as mine when it comes to a vegetable passing their lips then you will love this recipe as it is very easy, can be bulk prepared and frozen for a quick and healthy mid week meal for your family.


You will need:

  • Pork Sausages (I do at least two per person and use ones with a very high meat content)
  • 2 tablespoons of olive oil
  • Pasta (any dried pasta shape will do)
  • A jar of passata
  • Two cans of chopped tomato
  • Tomato Puree
  • A large handful of spinach
  • A courgette
  • An onion
  • Two carrots
  • A red pepper (they might be able to taste this at the end so be warned if they hate pepper)
  • Any root vegetable that you want to add (I use swede)

To prepare the meatballs:

  • Use a pair of scissors to cut the skin and remove
  • Cut each peeled sausage in half and roll in a ball
  • Brown off in a pan using 1 tablespoon of olive oil

To prepare the hidden vegetable sauce:

  • Chop all of the vegetables fairly small so that they cook quickly
  • Put onion into the pan with 1 tablespoon of olive oil and soften
  • Add in all other vegetables and all of the passata 
  • Add in the cans of chopped tomato and a tablespoon of puree
  • Bring to the boil and then simmer until the harder vegetables such as carrots are very soft
  • Blend to a smooth sauce 
  • Add in more puree to taste
  • This will create more tomato sauce than you need for one family meal so you can portion the rest and freeze it.  It also works brilliantly on its own, with chicken and with minced beef as a bolognese

To prepare the meal:

  • Cook the pasta according to the instructions
  • Mix the browned meatballs into the sauce and ensure that they are hot in the middle when you serve
  • Mix the sauce and the pasta together and serve
