YOU HAVE TO TRY THESE HOMEMADE WHOOPIE PIES

OK! I am originally from the UK, so I have never come across anything that tastes as good as a whoopie pie. I first tasted them at a bakery in Florida and I fell in LOVE! WHO EVEN CAME UP WITH THIS GREAT INVENTION? I had to learn how to bake these amazing pies and that is exactly what I did. So, here I am today sharing this recipe with you all! 

Preparation Time: 30 minutes 

Cooking Time: 8-12 minutes

Servings: 8-9 servings 


Ingredients:

  • 1 1/4 Cup of Unsweetened Cocoa Powder
  • 2 Cups of Sugar 
  • 2 Eggs 
  • 1 1/2 Cup of Butter 
  • 1/2 Tbs of Vanilla Extract 
  • 3 Cups of Flour 
  • 1/4 Tsp of Baking Powder 
  • Salt (optional) 
  • 1 1/2 Cup of Milk

Ingredients For Filling:

  • 1/2 Tbs of Vanilla Extract 
  • 2 Cups of Confectionary Sugar 
  • 1 Cup of Vegetable Shortening 
  • Milk ( if needed)


                                                                           Preheat oven to 350 degrees F

PREP BATTER FOR CAKE: You will need two separate bowls for this, one will be used for the wet ingredients and the other for the dry ingredients. In bowl one, add the flour, cocoa powder, baking soda and salt (optional). In bowl two add the butter, sugar and the eggs and beat them with either manual whisk or an electric whisk until all the ingredients have combined in well together. Add the wet mixture into the dry ingredients slowly, you will need to do this in small amounts, whisk and then pour some more, this will prevent lumps and also give you an indication of what type of consistency your batter will be.

BAKE: Grease your baking tray and using a tablespoon take spoonfuls from the batter and place them on to the baking tray. Bake the pies for 10-12 minutes, allow them to cool completely once done.

PREP FILLING: Add the vegetable shortening, confectionery sugar, vanilla and eggs into a bowl and whisk it well. Add the milk slowly making sure that the filling stays at a creamy consistency, you don't want it to be too watery or too thick. Once the cakes are cool, spread the filling on them and put another cake on top (kind of like a burger) and ENJOY!
